Let's make a meal, Roast beef with stroganoff sauce is a delightful combination of tender, flavourful roast beef served with a rich, creamy sauce. This dish pairs the hearty roast with a luxurious sauce for a satisfying meal that's perfect for a special dinner. Here's how you can make it at home:
Ingredients:
- 2 tbsp olive oil
- 1 tbsp chopped thyme leaves
- 1 tsp crushed garlic
- salt and grounded black pepper for taste
- 1 kg whole fillet, rump, sirloin
- 1 tbsp Worcestershire sauce
- 80 beef stock
- 200 g sliced mushrooms
- 1 onion, thinly sliced
- 125 ml creme fraiche
- 15 ml sherry
- few sprigs of thyme
How to make Roast beef with stroganoff sauce:
- Preheat the oven to 200 degrees Celsius
- Combine the oil, chopped thyme, garlic, salt and black pepper in a pestle and mortar and pound lightly until mixed. Rub all over the surface of the meat.
- Place the meat in a roasting pan and roast for 20-30 minutes, depending on the cut meat.
- Combine the tomato paste, Worcestershire sauce, beef stock, mushrooms and onion.
- Remove the meat from the oven and pour over the mushroom sauce . Return to the oven for a further 15-20 minutes for rare to medium , or longer, depending on how you like your meat.
- When done, transfer the meat from the pan to a plate, cover and allow to rest for 10 minutes before carving.
- In the meantime, Add the creme fraiche and sherry to the mushrooms and onions in the pan. Stir until well combined . Spoon this creamy sauce over the sliced meat, garnish with thyme and serve with mashed potato or rice and a vegetable of your choice.
