Ingredients:
30 ml (2 Tbsp) peanut oil
400 g chicken fillet strips. cut into thirds
1 red onion, cut into thin wedges
10 ml (2 tsp) chopped fresh garlic
15 ml (1 Tbsp) chopped fresh ginger
300 g stir-fry vegetables.
60 ml (¼4 cup) plum sauce
30 ml (2 Tbsp) sweet chilli sauce
5 ml (1 tsp) sesame oil
30ml (2 Tbsp) fish sauce
300 g egg noodles, cooked
60 ml (½ cup) chopped fresh coriander
How To MAKE Chicken and plum stir-fry Recipe:
1. Hoat the oil in a wok and fry the chicken over a high heat until slightly browned.
Remove from the wok and sat nside.
2. Add the onion, garlic and ginger, and stir-fry for 1 minute.
3. Add the vegetables and stir-fry for 2-3 minutes, then return the chicken to the wok.
4. Mix together the plum sauce, sweet chilli sauce, sesame oil and fish sauce.
Add this to the wok with the cooked noodles and toss well to combine.
5. Stir in the coriander and serve.
